  • 2 cups cake flour
  • 1.5 cup sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/2 cup vegetable oil
  • 7 egg yolks unbeaten
  • 3/4 cup cold water
  • 2 tsp vanilla
  • 2 tsp lemon rind grated
  • 1/2 tsp tartar
  • 7 egg whites


Sift flour, sugar, baking powder, and salt together two or three times.Mix oil, egg yolks, water, vanilla, and lemon rind together well; then add to the dry ingredients and blend until smooth.Add cream of tartar to egg whites; then beat until very stiff, but not dry.Pour the creamed mixture in a thin streamed over the egg whites; then fold gently together until well blended.Pour into an ungreased tube pan bake at325F for 65 minutes. Turn off oven but to do not remove cake for another 5 minutes.Remove cake from oven and invert pan until cake cools.
